Like everybody knows, pasta makes us happy and Linguine with courgettes even more. The green vegetable is a surety for summer feelings. Together with lemons and mint you have that Italian vibe on your tongue.
With you, we share our favorite pasta recipe that reminds us on a trip to Bella Italia.
50 g butter, 1 tbsp. olive oil, 5 courgettes, 1 minced garlic clove, 500 g Linguine, 1 pack of mint, 120 g parmesan and zest of 2 lemons
Cook the linguine following the pack instructions, then drain quickly so some cooking water is still clinging to the strands.Tip back into the cooking pan with the grated courgettes, olive oil, butter, garlic, lemon zest and most of the mint. Season generously, then use tongs to toss everything together. Scatter with remaining mint leaves and add the parmesan on top. Bon appetito!
